Section 1-7 - Variance Requirements

(a) If the Wyoming department of agriculture grants a variance as specified in Chapter 1, Section 6, or a HACCP plan is otherwise required as specified under Chapter 1 0, Section 1, the license holder shall:
(i) Comply with the
HACCP Plan and procedures that are submitted as specified under Chapter 10,
Section
2,
and approved as a basis for the modification or waiver; and
(ii) Maintain and provide to the Wyoming
department of agriculture, upon request, records specified under Chapter 10,
Section
2(a) (iv) and
(v), that demonstrate that the following are
routinely employed:
(A) Procedures for
monitoring critical control points;
(B) Monitoring of the critical control
points;
(C) Verification of the
effectiveness of an operation or process; and
(D) Necessary corrective actions if there is
failure at a critical control point.
