Eggs awaiting shipment from the dealer for shell egg consumption shall be stored at a temperature below 45 degrees Fahrenheit in a place that is well ventilated, clean, and free from products giving rise to strong odors. Each area where eggs are held or stored shall be provided with a Fahrenheit or Celsius thermometer. Eggs sold for further processing are exempt from the temperature requirement.
