Steam shall be supplied in sufficient volume and pressure for satisfactory operation of each applicable piece of equipment. Steam that may come into direct contact with milk or dairy products shall be culinary steam conducted through a steam strainer and purifier equipped with a steam trap and shall be free from any compounds that may contribute flavors or endanger health. Only compounds complying with 21 C.F.R. 173.310, as amended to March 1, 2006, may be used to prevent corrosion and scale in boilers, or to facilitate sludge removal.
