Section 7.13.2.71 - FOOD TEMPERATURE REQUIREMENTS

A. All perishable food shall, except when being prepared, be kept at forty-five (45) degrees F. or below, or one-hundred-forty (140) degrees F. or above.

B. Foods requiring refrigeration shall be kept at forty-five (45) degrees F. or below. Frozen foods shall be kept at zero (0) degrees F. or below.

C. Refrigerators and separate freezers shall have thermometers. Metal stem thermometers shall be available to measure proper internal cooking and holding temperatures.
