1. The equipment and utensils used in a mobile processing unit to handle edible food products must be:
(a) Constructed in such
a manner and made of such materials to ensure the equipment and utensils may be
thoroughly cleaned such that the equipment and utensils do not cause the
adulteration of such edible food products; and
(b) Constructed, located and operated in such
a manner that allows employees to inspect the equipment or utensils to
determine the sanitary condition of such equipment or utensils.
2. All equipment and utensils used in a mobile processing unit must be:
(a)
Maintained in a sanitary condition;
(b) Designed and installed to prevent
contamination of edible food products by foreign materials, including, without
limitation, lubricants, heat exchanger media, condensate, cleaning solutions,
sanitizers and other nonfood materials; and
(c) Self-draining or designed to be cleared
of water.
3. Any equipment in a mobile processing unit that uses a clean-in-place system must have sanitation procedures that are as complete and as effective as the procedures for cleaning and sanitizing disassembled equipment.
