Section 10.15.11.11 - Unit Processing Operations - Container Sanitation

The person-in-charge shall ensure that:
A. Containers are:
(1) Protected from contamination;
and
(2) If multiservice, adequately
cleaned, sanitized, and inspected prior to filling in accordance with
21 CFR § 129.80(b)(1), (c), and
(d);
B. Container caps are:
(1) Stored in a sanitary manner;
and
(2) Before use:
(a) Examined for cleanliness; and
(b) Washed, rinsed, and sanitized as
necessary to prevent contamination of finished product water; and
C. Records are made at the plant that:
(1) Document the proper
cleaning and sanitization of containers;
(2) Are maintained for at least 2 years;
and
(3) Are available for
inspection by the Department.
