A. A dietary manager shall meet one of the following:
1. be a graduate of a dietetic technician or
dietetic assistant training program, approved by the American Dietetic
Association, by correspondence or classroom;
2. be a graduate of a state-approved course
that provides 90 or more hours of classroom instruction in food service
supervision and has experience as a supervisor in a health care institution
with consultation from a dietitian; or
3. have training and experience in food
service supervision and management in the military service, equivalent in
content to a dietetic technician or dietetic assistant training program,
approved by the American Dietetic Association, by correspondence or
classroom.
