Rule 16.03.11 - INTERMEDIATE CARE FACILITIES FOR PEOPLE WITH INTELLECTUAL DISABILITIES (ICFS/IID)
Section 16.03.11.801 - PURCHASING AND STORAGE OF FOOD

Each ICF/IID must purchase and store food as follows:

01. Food Source. Each ICF/IID must obtain all food and drink from an approved source identified in IDAPA 16.02.19, "Idaho Food Code."

02. Record of Food Purchases. At a minimum, each ICF/IID must keep a record of food purchases that includes invoices for the preceding thirty-day (30) period.

03. Food Supply. Each ICF/IID must maintain on its premises the following food supplies:

a. Staple food items sufficient for a one-week (1) period; and

b. Perishable food items sufficient for a two-day (2) period.

04. Temperature Requirements. Each refrigerator and freezer must be equipped with a reliable, easily read thermometer to ensure the following guidelines are met:

a. Refrigerators must be maintained at forty-one (41°F) degrees Fahrenheit or below; and

b. Freezers must be maintained at ten (10°F) degrees Fahrenheit or below.
