Section 11-99-30 - Sanitation

(a) Sanitation shall be in compliance with all applicable laws of the State of Hawaii and rules of the department relating to sanitation.

(b) Written summary reports of inspections by state or county health authorities and records of action taken in correction of deficiencies and recommendations shall be kept on file at the facility. (c) Every facility shall provide a sufficient number of watertight receptacles of metal, or other materials acceptable to the department, for rubbish, garbage, refuse and other discarded matter.

(1) In kitchen and food preparation areas, receptacles shall be kept closed by tight-fitting covers except in the kitchen during peak hours of food preparation.

(2) An area shall be provided for the washing and cleaning of garbage containers and for the storage of garbage, trash, and solid waste.
