7.1. All licensed and exempt poultry producers must create and maintain records for each customer transaction, including, at a minimum:

7.1.1. The date of the slaughter;

7.1.2. The date of the sale;

7.1.3. The name and address of the buyer;

7.1.4. A description of the poultry or poultry products processed, including species and quantity; and

7.1.5. The name and address of the producer / processor.

7.2. The records created and maintained pursuant to this Part 7 must be kept for at least two years and made available to the Commissioner on demand.
