Section 1406.4 - Asparagus, White Stalks
Asparagus stalks shall not have more than 1 1/2 inches of white color, beginning from the cut end of the stalk. However, 20 percent of the stalks in any bunch or container may have more than 1 1/2 inches of white, provided that not more than 5 percent of this amount exceeds 3 inches of white in length. Containers of asparagus clearly and conspicuously marked with the word "white" may be packed if grown north or west of San Gorgonio Pass, provided not more than 5 percent of the stalks in any container contain more than 1 1/2 inches of color other than white on the stalk.
Individual containers in any lot may contain 1 1/2 times the tolerance, provided the lot averages within the specified tolerance.
