Pathogens may be introduced below the surface of non-intact beef cut as a result of the processes by which they are made. FSIS considers diced beef products (beef cubes) of less than threefourths of an inch to exhibit the same food safety characteristics as raw nonintact beef products. Similar to ground beef, when cubes are made smaller-andsmaller, the cubes begin to stick (or clump) together, allowing pathogens previously restricted only to the exterior of the meat to be distributed throughout the mass (or clump) of cubes.
