Summary of Collection: The Food
Safety and Inspection Service (FSIS) has
been delegated the authority to exercise
the functions of the Secretary as
provided in the Poultry Products
Inspection Act (PPIA) (21 U.S.C. 451 et
seq.). These statutes mandate that FSIS

wholesome, unadulterated, and
properly labeled and packaged.
Need and Use of the Information:
FSIS requires that all poultry slaughter
establishments develop, implement, and

or Sanitation SOPs, or other prerequisite
programs, written procedures to prevent
contamination of carcasses and parts by
enteric pathogens, e.g., Salmonella and
Campylobacter, and fecal material
throughout the entire slaughter and
dressing operation. FSIS requires that
these procedures include sampling for
microbial organisms at the pre-chill and
post-chill points in the process to
monitor establishments’ process control
for enteric pathogens, except for low

to test only at post-chill. If the

reduce the effectiveness of the poultry
