1. Chemical Use(s): Antioxidant in
food applications for which the vitamin
activity of ascorbic acid (Vitamin C) is
not required. Specifically, the
compound is most frequently used to
develop and retain the coloring and
taste in meat products. It is also used for
seafood products, fruit, and vegetable
preservation, in beverages, and as a
developing agent in photographic
applications.
